- 4 cups finely shredded cabbage
- 1 small red pepper, cut in thin short strips
- 2 grated carrots
- 4 green onions, sliced
- 1 cup bean sprouts
- 1/4 cup cilantro, chopped
- 1/4 cup chopped peanuts
Dressing:
- 3 T rice vinegar
- 3 T hoisin sauce
- 2 t sesame oil
- 2 tsp minced ginger
- 1 t soy sauce
- 1 t white sugar
- 1 clove garlic, minced
Toss salad ingredients in large bowl. In separate bowl, combine dressing ingredients. Dress salad, garnishing with cilantro and peanuts. Optional add-ins: shrimp, shredded chicken, shredded mint.
