Perfect Steamed Rice for 2

1.5 cups long grained rice

15 oz water

Rinse rice in sieve until water runs clear. Bring rice and water to a boil in a wide pot. Boil, uncovered, until steam holes appear in rice and rice looks on the dry side, 5 minutes or so. Cover, lower heat to very low, and cook 15 minutes. Let cooked rice stand for a while before fluffing.

The math for doubling is 3 cups rice and 3 3/4 cups water.
